Yummy Chicken!

Tacos are always a go-to around here. As a busy mom with three little kids, anything you can cook up quickly and roll in a tortilla is a game changer! Usually, the filling is ground beef or ground turkey (which ALSO would work for this recipe, just substitute for the chicken) but we like to switch things up once and a while. So I usually just dice some chicken breast as small as possible, sauté in my favorite pan, then sprinkle on some of my favorite homemade taco seasoning… But one day I decided to add a generous scoop of Garlic Head along with the taco seasoning… and it was so delicious that my picky four year old exclaimed "This is YUMMY CHICKEN!" So, now this is known as Yummy Chicken at our house! Hope you find it just as YUMMY as we do!

YUMMY Chicken

Ingredients:

1 lb chicken breast, diced small

1 T olive oil

1 tsp chili powder

1/2 tsp cumin

1/2 tsp marjoram

1 tsp garlic powder or 1-2 cloves of fresh garlic, crushed

1 tsp Mrs. Wonderful Salt (any blend will work!)

1/3 c water

1 T Garlic Head (or double if you want!)

  1. In your favorite skillet, heat olive oil on medium heat, then add diced chicken and sauté until fully cooked and no longer pink. If your chicken is diced small, this should only take a couple minutes.

  2. Sprinkle in your dried spices and salt, then add the water to help the flavors cover all the chicken. Stir in your Garlic Head and simmer until the sauce has thickened and coats all the chicken evenly.

  3. Enjoy! This is delicious served in tortillas with your favorite taco toppings, or over rice to make a rice bowl!

*Recipe Note: For something different, try substituting 1 lb of ground beef or ground turkey. It's sure to be just as Wonderful!
